Ben has turned a year older today, so as I had an afternoon off I have baked him a birthday cake.
Not just any cake though, this is a 4 tiered, lemon drip cake with homemade decorations on top (I like to set myself s challenge!).
The cake part was simple, it is a basic Victoria sponge recipe, with lemon zest and a little lemon juice added. The top and bottom tiers are sandwiched together with lemon curd, and the middle layers have a buttercream filling. The entire outside is coated in lemon buttercream.
The drip is a white chocolate ganache, coloured with yellow colouring paste.
The top has been decorated with homemade mini macaroons and cinder toffee, some shop bought meringues, chocolate stars and gold glitter dust.
It is way over the top, but it is delicious!
